Brief of the Cognac style
With the arrival of the Dutch in the 16th century, lies the origin of this stylish drink, Cognac. Thus, with the struggle to keep their plenty of French wine bought for the journey home, they began distilling it into eau-de-vie, a higher alcohol strength beverage which also became convenient for transport in ships. The drink is a brandy variety getting its name from a small town in France, Cognac
For a Brandy to be called cognac, it must adhere to set regulations governing the production of cognac. Every cognac must:
- Be made from white grapes from the Cognac region of France only.
- Be double distilled in copper pot stills.
- Be aged for at least 2 years in French Oak, Troncais, or Limousin.
Fermentation, distillation, blending and aging in oak result in a dark alcoholic beverage with an ABV level of 40 percent. Colour differs across cognac brands depending on the period of aging. Some of the oldest yet operational cognac companies include Martell, Remy Martin, and Hennessy stretching back to 1715, 1724, and 1765 respectively.
The cognac-making process is complex and long. For this reason, cognac prices are usually high compared to other similar alcohol types. Cognac producers have created a trend of making it a luxury alcohol type, presenting it in different expressions and classy packaging.
